Vellum was a restaurant at 209 S. Main Street in Ann Arbor that opened in 2012 and closed in 2015. Jim Brady's Detroit is planning to open in this location.
When it opened the restaurant had an innovative menu, featuring dishes cooked in the "sous vide" method. The concept was changed about a year later to a more traditional grill style menu, and it closed in early 2015. The owners put the building up for sale after it closed,
